A good way to test this is by running a knife through the icing—the line should disappear in about 15 to 20 seconds. This consistency gives you smooth lines and details without running, but it’s not ideal for anything that needs to stand tall, like flowers or structural borders.
Flood consistency is your go-to for filling in cookies with that smooth, glossy finish. It’s the thinnest of the three and creates an even surface that dries beautifully. To get this texture, mix nine to ten tablespoons of water per 500 grams of ENCO Royal Icing. When you run a knife through it, the line should vanish in about five to ten seconds. The icing should flow easily without being runny. For better results, use a scribe tool to guide the icing into corners and to pop any air bubbles for a clean, professional look.
